Originally matured in a first fill bourbon barrel before being transferred into a French oak calvados xo cask. A cask which had previously held apple brandy for six years. Sweet and smooth on the palate with touches of vanilla, honey, orchard fruits and woody spice.

Pot Still Irish Whiskey 70cl

The Glendalough Pot Still Batch 1 was made from a 1:2 mash bill of malted and unmalted Irish barley, matured for 3 years in a Bourbon cask and up to a year in Irish oak casks. Each bottle is individually numbered with tree, cask and bottle numbers. 21,000 bottle release.

Seasonal Spring Gin 70cl

For this gin local botanicals were foraged from the area around Glendalough and were combined with traditional gin aromatics before being distilled together in the company's small copper still. For this batch the following botanicals have been used. Juniper, corriander seeds, lemon peel, angelica root, licorice root, bitter almond, orris root, darred malt, ceylon cinnamon, ginger, all spice, gorse flowers, dandelion flowers, beech leaves, sweet cicely, primrose, hawthorn leaves, woodruff leaves and flowers, ground ivy, wood sorrel, birch sap and water mint. Because of natural oils present in the gorse and dandelion flowers there may be a slight haze in the gin, especially when the bottle gets cold. This is nothing to worry about! The distillers could have filtered it to remove these natural oils but thought it best to leave in as much flavour as possible.

Glendalough Distillery gives you a whole new style of single grain Irish whiskey, aged first in American Bourbon barrels and finished in Spanish Oloroso sherry casks. Suggested Serve: Neat, on the rocks or in a cocktail. Glendalough Irish Mule: Ingredients: 60ml Double Barrel 15ml Fresh Lime Juice Top up with Jamaican Ginger Beer 3 dashes Angostura bitters Garnish Lime wheel Tools: Barspoon Glass Highball Directions: Pour the whiskey and lime juice into an ice-filled glass. Add the ginger beer, stir, then bitters on top and garnish with lime wheel. Tasting Notes: The nose is slight for a whiskey, but undoubtedly rich with dark fruit, cherry, raisin, fig - Christmas cakey - along with floral notes and lemongrass. The taste is sweet and creamy on the palate to the front, with butterscotch, honey and peppercorn. Followed by dried fruit returning maraschino cherries and a pinch of brown sugar. The finish has drifting notes of ginger spices and sweet vanilla with a faint shaving of almond to end a complex whiskey from start to finish.
