Artisan Pot Still Gin 70cl

Dingle Original Gin is the product of a considerable amount of research, both technical and historical, and experimentation. Our aim was to create a totally unique gin, one which worked within the great tradition of gin distilling but which also came with a degree of innovation. In terms of its broad style, this is what is categorised as a London dry gin but the unique character and flavour come from our painstaking and original choice of botanicals. This combination of flavour elements are macerated in spirit for 24 hours. Then, when the spirit is distilled, it passes through a flavour basket in the neck of the still. This process underlines the attention to detail that is an essential part of our whole approach to the art of distillation. We use, amongst other botanicals, rowan berry from the mountain ash trees, fuchsia, bog myrtle, hawthorn and heather for a taste of the Kerry landscape. It’s a formula unknown elsewhere and is calculated, amongst other things, to create the sense of place and provenance. The spirit is collected at 70% abv and then cut to 42.5% abv using the purest of water which we draw from our own well, 240 feet below the distillery.

Grianstad an tSamhraidh Single Pot Still Irish Whiskey 70cl

The next edition in the Celtic Wheel of the Year series is here – Grianstad an tSamhraidh Single Pot Still Whiskey, finished in American Rye casks. This release pays homage to the summer solstice and longest day of the year. In Celtic tradition this is considered the peak of summer, and is revered for its plentiful hours of life-giving sunlight. Grianstad an tSamhraidh is the last great festival before daylight begins to dwindle, so we celebrate it enthusiastically as the crops begin to ripen and bear fruit. To see the sun set from Dingle on Ireland’s west coast is an incredible experience, and always worth the wait.

Dingle 7 Year Old Palo Cortado Irish Whiskey 70cl

This 7 Year Old Limited Edition Single Pot Still Whiskey, created by Head of Maturation Paddy Foley and bottled exclusively for The Irish Whiskey Collection was matured in Palo Cortado Sherry casks, developing a silky, full-bodied taste with signature Single Pot Still oiliness. Salted caramel and cr?me br?l?e opens to roasted nuts, dates and spiced citrus with warm clove and nutmeg, balanced by a sweet, malt core. Dingle Distillery crafts whiskey by hand, guided by patience, integrity and a deep sense of place. Single Pot Still Whiskey ? From the Edge. Sl?inte.Tasting Notes: Nose: Toasted hazelnut and almond up front, followed by dried orange peel and treacle toffee. Layers of vanilla pod, honeycomb and gentle coconut from the bourbon cask sit beneath the sherry notes. Hints of leather-bound books, raisin bread, and a delicate earthy edge. Taste: Silky and full-bodied with the signature Single Pot Still oiliness. Salted caramel and cr?me br?l?e lead, opening into roasted nuts, dates, and spiced citrus, with warmth from clove and nutmeg balanced by a sweet malt core. Finish: Long, warming and satisfying. Cocoa powder, burnt sugar and polished oak linger with walnut and dried fruit.

We believe that many famous vodkas are about branding over substance and we were determined to create a vodka of supreme quality without, at the same time, attaching a wildly inflated price tag to it. Our still is charged with 500 litres of the finest, purest, grain alcohol and is then distilled for a fifth and final time. Dingle Distillery Vodka is most unusual in being quintuple distilled. That fifth distillation makes a huge difference. You can taste it in the incredible purity that is as pure as the environment where we make it. There’s just a touch of sweetness and creamy texture that takes a lot of people by surprise. It is exceptionally good drunk neat. We set out to make a really, really good vodka but even we were surprised when we tasted the first batch. It was one of those rare times when you get something perfectly right at the first go. Again, it must be tasted to be understood.

The first core range release of Dingle whiskey. This is a triple distilled single malt and has been vatted exclusively from first fill casks. The make-up of those selected is 61% Pedro Ximenez sherry casks and 39% Bourbon barrels.
